Black Bean Chocolate Cupcakes with Peanut Butter Frosting
I love peanut butter and chocolate together. I mean who doesn’t right?! Well for me I can’t just go out and buy peanut butter cup because it has soy in it. I tried to eat one last year around Halloween. My son asked for it and then decided he would change his mind (Like most 2 yr old’s) But it was sitting there just mocking me saying “eat me eat me!! It’s only a stomachache right?!” So I gave into temptation and boy was I sorry. I had a stomachache with in the hour. :-/ So I have to find ways to get my peanut butter chocolate fix and these Black Bean Chocolate Cupcakes are amazing. Topped with Peanut Butter Frosting people will be asking for the recipe. Enjoy!!

Make sure your beans are nice and rinsed
This recipe works best if you have a large food processor or a blender
But it can be done with a small one too and a mixer
I will look a little like this in the mixer with more pieces but I promise they still come out great.
It has a little bit thicker consistency than regular cupcake mix

Ingredients
- 1(15oz) can black beans (rinsed)
- 4 large eggs (2 for now 2 for later)
- 1 tablespoon Gf vanilla extract
- 5 tablespoons butter (softened)
- 3/4 cups sugar
- 5 tablespoons cocoa powder
- 1 teaspoon Gf baking powder
- 1/2 teaspoon baking soda
- 2 tablespoons arrowroot powder
- 1(small) box instant pudding mix
- Peanut Butter Frosting
- 1/2 stick butter
- 1 tablespoon Milk
- 1 1/2 teaspoon vanilla extract
- 8oz powdered sugar
- 1/2 cup peanut butter (I use Peter Pan bc its is soy free)
Directions
| CUPCAKE | |
| Step 1 | Place black beans in food processor/blender with 2 eggs, vanilla extract, softened butter, and sugar. Until fully blended. |
| Step 2 | In a separate bowl add all dry ingredients. |
| Step 3 | Add to wet mixture combine until blended. You can do this all in the food processor if it fits. |
| Step 4 | Fold in 2 more eggs. |
| Step 5 | Put in cupcake liners. Bake at 350 for 20-25 mins or until done |
| FROSTING | |
| Step 6 | Put butter, milk, and vanilla in Kitchen Aid mixer and blend until fully mixed. Scrape sides of bowl if need. |
| Step 7 | Add powder sugar mix until blended. |
| Step 8 | Add peanut butter mix until blended |

this was one of the yummiest cupcakes I’ve ever had! There is no way you can tell there are beans in it. It just tastes like deep, dark chocolate. Great recipe!
